Fig trees were a favorite orchard tree in Biblical times in Israel, and European colonists imported the trees and dried figs into the U. S for growing and eating. Figs are richly flavored, sweet fruits, and new hybrids produce a wide range of ripe fig colors: purple, blue, black, white, yellow and even green.
New fig hybrids grow the fruits as large as lemons with high sugar content, perfect for drying for winter use and cooking. Fig preserves on toast are a Southern favorite breakfast treat.
